Cooked Dr. Ornish's Two Bean Enchiladas for lunch. Since I'm not trying to ban all fat, I used some canola oil to sautee the onion and green pepper and added a sprinkling of cheese. They came out much, much better than I was expecting. The filling on its own was uninspiring but the assembled dish was very good.

Bottled garlic isn't as good as frozen garlic. Trader Joe's sells or used to sell these little ice cube tray packs of frozen garlic, cilantro, parsley, etc. Each cube was a teaspoon of garlic/herb. They were very good. Fresh garlic is best, of course, but any garlic I try to keep on hand turns into a cluster of green shoots before very long, since I cook so very infrequently. Frozen garlic is the next best thing.

My dad gave me a manual knife sharpener for Christmas a year or so ago. He'd taught me how to sharpen a knife with a sharpening stone, but it never seemed to do the knives much good: I assume I was doing it wrong. I love this knife sharpener. People periodically remember that I used to like to cook and give me expensive knives as presents, which in their newly-bought state quail before the average onion. This knife sharpener takes care of that, and it's practically impossible to do it wrong.

I love the idea of frozen garlic! We have minced garlic in these toothpaste-type tubes at the grocery store but I've never used them. I would consider freezing my own except that it would render everything else in my freezer unusable. ;) I do, however, make and freeze my own chicken stock in one-cup servings and it is fantastic.

I've always been discouraged from that by the fact that my freezer produces spiky snowballs of water ice even inside the most securely-sealed containers and bags. I'm not sure what the problem there is. Maybe my seals just aren't sealed enough. But the original frozen material generally isn't very good once this has happened.
