A Post Not About Illness, Work, or Cats

This one is about food.

These are my "healthy" cinnamon rolls: a variation of the Big 'n' Soft" cinnamon roll recipe on Food.com.

And the amazing thing is, even though I replaced butter with canola oil, white with white whole wheat flour, cut the sugar in half, used soymilk, evaporated cane juice, etc., etc., they came out REALLY WELL.

These are REALLY GOOD. Seriously. And I like the pattern they make: those imperfect spirals remind me of Celtic stone carving.

They take a while - two risings - but the amount of actual labor is quite small. Just mixing the dough and, later, rolling it out and up -- you don't even have to knead it (although I did a little to make sure all the flour was incorporated.)

The mess is limited to flouring an adequate space to roll the dough out. And I put down a tea-towel first so I could just shake it into the trash and have a clean counter underneath. A very satisfactory baking experience!

Without glaze (I find glaze distracting) they average 238 calories each, according to Master Cook.

They are. They freeze well, too. I'm very pleased with them (although I didn't realize I was going to get two dozen of them when I set out to make them!)
