Today's baking: homemade Hob Nobs

The recipe: Homemade HobNobs

I made them with Canola oil rather than butter, which is healthier but made for a crumblier cookie. I think I might add an egg white next time. And I didn't bother with the chocolate coating, which looked far too fiddly and messy.

I proclaim these to be Oat Shortbread. And tasty. I'll be making these again.
