SB Diet - Week 1

Well, today is my 8th day on the South Beach Diet. I have lost 3 pounds, but because of the restrictions of the first two weeks, I don't expect that to continue at that rate after next week. To avoid gibbering madness, I've eaten small amounts of carbs at times when the pressure got to be too much (and I didn't think I could face another piece of cheese). But I have lost weight, so I suppose it's working.

I have learned useful things: don't cover a bowl of salad with plastic wrap, or it will wilt to a third of its original size (I thought S. had eaten half of it before I figured out what had happened.) Also, while I like balsamic vinegar on some things, I really don't like it with lettuce or with fish.

I am looking very much forward to the weeks after day 14, when I can return to brown rice (which I quite like), oatmeal, whole grain pasta (not quite as fond), and air-popped popcorn. I wasn't a big potato, white pasta, full-fat cheese, or red meat eater, so avoiding them won't be a sacrifice, but I do have a profound sweet tooth. If I can quiet that down, I'll be very satisfied. And I have hope: I thought about cake, ice cream, and such, yesterday, and realized that I had no impulse to stop and get any. I mostly just wanted a big bowl of ANYTHING based on grain.

I've done SB a few times (much more difficult as a vegetarian, let me tell you) and I can definitely relate to these sentiments! I never thought of myself has having that big of a sweet-tooth, but tell me that I have to cut ALL sugar from my diet and I just start despairing. I did find, though, that after about three weeks of no sugar (and I don't do sugar free because artificial sweeteners taste unpalatably bitter to me), I lost the craving.

I was working at a health food store when I did the diet, and we sold this soybean pasta that was excellent and totally saved me, but having now just looked around the internet, that company seems to be out of business. NOOOOOOO!!!! That's very distressing!

Doing it as a vegetarian sounds extremely challenging! I'm figuring out that the only carbs I'm allowed in Phase I are from legumes, so I'm planning on chick-pea salads and other cooked beans. (I went through an entire 25-serving pot of hummus in 4 days).

That soy pasta sounds like it would have been handy! Pity they're out of business!

My DH has been on Atkins/SB type thing for a few years now. (We call it the "meat with a side of meat" meal plan. ;) ) He began when he found that he had not outgrown the dairy/egg/gluten allergy from childhood. Then he broke from it a little when things improved (from not always being in an allergic reaction). When he turned up with high blood sugar he went back to avoiding the carbs and deducting fruit also.

He seems fairly happy on it. Cholesterol seems to be only issue though.

Well, I fell off the wagon in a big way this weekend, with popcorn and even cake. *sigh* Back on the wagon -- I hope -- tomorrow.

I hurt my right (dominant) hand thumb badly this morning, so chopping anything to cook is pretty much out of the question. I may wind up just eating meat tomorrow, because at least that's already cooked.
